Sustainability

Fifteen Cornwall unashamedly set out to be a profitable restaurant, allowing it to continue in the apprenticeship scheme that has so far produced so many success stories. Despite this, we also want to be a frontrunner in creating a business that is also championing a more ‘sustainable’ way in business.

Energy efficiency
Ambient temperature is managed through a heat transfer and recovery system, utilising the excess heat extracted from the kitchen and passing air over hot water pipes…we have no air conditioning!

Our solar reflective, double glazed windows serve to keep out heat from the sun during the summer, whilst retaining heat during the colder months.

The restaurant lighting is a mix of low energy LED’s and dimmable lighting which is set at less than 80% when the restaurant is open. Further to this, back of house and some of our customer convenience lighting is movement activated.

Water is heated on demand by a highly efficient boiler. We also regularly check the temperature of the heated water from our taps, ensuring excess energy is not wasted through unnecessary water heating.

Our kitchen is partially equipped with induction hobs. These only draw power when in contact with the pan.

Every fridge in the kitchen is equipped with a state of the art ‘Kooltrack’ monitoring system which tells us to-the-minute temperature data and energy output which will alert us if any are not running efficiently, or highlight potential faults.

Sourcing
Food miles are kept to a minimum with least 80% of our menu is sourced locally…watch this space for our ‘food miles map’ which lists many of our local suppliers.

Our drinks list has a refreshingly large amount of locally brewed beers, soft drinks and wine. Again we have minimized the miles, kept business within the locality, along with many suppliers having their own commitments to sustainability themselves.

 

Cooperation
Fifteen Cornwall is a member of the CoaST project, who offer ongoing advice on sustainability and work with many other Cornish companies with a shared interest in long term environmental sustainability.

Our preferred taxi companies run their vehicles on LPG or biofuel, both having a reduced impact on the environment.

Working with the Hotel & Extreme Academy, Watergate Bay, the ‘Recycle Bubble’ does a daily beach clean, picking up debris washed up during the night, or left by absent minded visitors.

Recycling and waste
All glass, metal, paper, cardboard and plastic is recycled.

Many of our suppliers deliver goods in reusable crates and containers that are picked up on their return runs.

Working with Envision and in cooperation with the Watergate Bay Hotel, we are actively working on improving waste management.

All of our toilets are connected to a 3000 litre rainwater harvester, saving 100,000’s litres of water every year.

There are also a number of recycling bins in the adjacent car park and near the beach to prevent any accumulation of litter within the bay.

Looking ahead
From the beginning we have been environmentally conscious, but we continue to look for ways to reduce our carbon footprint. With a newly enlarged ‘Green Team’ we hope to make further gains in 2010…watch this space.
